The four distinct seasons of Japan brings about changes in the forest and the seas, showing us different, but still beautiful expressions in each season. My goal is to deliver the essences of the sea and the forest using seasonal ingredients, all expressed through our aesthetic and culinary voice creating a one of a kind cuisine experience.

I love what I do, and from the bottom of my heart I can say that a restaurant is my favorite place to be. The pleasant space and good music, discovering new tastes, and enjoying time with friends and loved ones make the experience worthwhile.

季節とともに abysse の表現にして発信していくことを考えています。

レストランは、私が最も愛する場所です。心地よい空間と音楽、新しい味に出逢った瞬間、
大切な人達とのかけがえのない時間など、レストランは大きな喜びと感動に溢れています。

Kotaro Meguro was born in Kanagawa, Japan in 1985. After graduating from culinary school, he worked at several restaurants based in Tokyo. Spending a year in France training at the 3 star Michelin restaurant “Le petit Nice-Passedat”, Meguro returned to Tokyo to work at the 3 star Michelin restaurant, “Quintessence”. Utilizing his accumulated experience, Meguro opened his own restaurant in Minami Aoyama, “abysse”, in 2015; later relocated to Daikanyama in 2019.
Awarded the one-star status in the michelin guide for 6 years in a row since 2016. Selected as Dining out Aomori's 2019 chef. Listed in the 2020 World's best restaurant discovery.

1985 年神奈川県生。
調理師学校を卒業後、
都内数店のレストランで修行しその後渡仏。
ルプティニースパセダ (＊＊＊) で 1 年間勤務。
帰国後、カンテサンス (＊＊＊) を経て、
2015 年南青山に abysse をオープン。
2019 年代官山に abysse 移転。
2016 年より6年連続でミシュラン1つ星を獲得。
2019 年 Dining out 青森のシェフに選出。
2020 年 World 50 best restaurant discovery。
